Whole-grain Gingerbread

Preparation:

  1. Beat the eggs and sugar until whitened.
  2. Add olive oil and baking soda dissolved in vinegar.
  3. Gradually add the sifted flour. Knead the soft dough (it should not stick).
  4. Shape into walnut sized balls and arrange them in a baking tray. You can press the balls with the bottom of a glass or a fork to give them a more interesting shape.
  5. Bake for about 10-15 minutes in a preheated 180 degree oven. Finished honey should be gold and soft to touch.
